150 g oyster mushrooms (blue oyster are our favorite)

Prepare the Mushrooms

  1. Gently clean the oyster mushrooms with a damp paper towel. Avoid rinsing them with water as it can make them mushy.

Create the Flour Mixture

  1. Combine the flour, paprika, garlic powder, onion powder, turmeric, cayenne pepper, salt, and black pepper in a large mixing bowl.

Make the Batter

  1. Take ⅓ cup of the seasoned flour mixture and transfer it to a separate bowl. Mix it with ¾ cup water and whisk until you have a smooth, lump-free batter.

Coat the Mushrooms

  1. Dip each mushroom into the wet batter to evenly coat it. Then transfer it to the seasoned flour mixture, coating it thoroughly.
  2. For an extra crispy texture, double-coat by repeating the process (dip back into the wet batter, then the seasoned flour once more).

Fry the Mushrooms

  1. Heat oil in a deep pot over medium-high heat. Test the oil by dropping a pinch of flour into it; if it sizzles, it’s ready!
  2. Fry the mushrooms in batches to avoid overcrowding the pot. Cook for a few minutes until golden brown and crispy.
  3. Remove mushrooms using a slotted spoon and place them on a paper towel to drain excess oil. For maximum crispiness, transfer to a cooling rack.

Serve

  1. Plate the crispy fried mushrooms and pair them with your favorite dipping sauce. You can also use them in a sandwich for a fantastic vegan "chicken" bite!
